1. The roasted chicken was fantastic. I rubbed it with salt and pepper and thyme, then piled potatoes and onion and carrots and celery around it. I baked it at 375 for 20 minutes, then 400 for another 35 or so. I took it out to test the temp and wasn't sure it was done, so I put some dollops of butter on the chicken and veggies and put it back
